Peanut Butter & Oatmeal Chocolate Chip Cookies+

In case no one mentioned it, last Thursday was National Homemade Cookie Day. Awesome, I know! Possibly not awesome that this post wasn’t up in time for you to make these on Thursday…but let’s be real, shouldn’t every day be cookie day? Below is my ode to cookie day being 365 days of the year! Enjoy!

These make use of my favorite chocolate chip cookie recipe with some amped up twists. The plus in the title is there for a reason. It stands for whatever you choose to add in! In this case I choose pretzel bits and toffee nibs!

Ingredients
  • Ingredients
  • 1 cup butter, softened
  • 2 cups white sugar
  • ⅛ cup molasses (if you don't have this, substitute one of the cups of white sugar for brown
  • sugar)
  • ⅓ cup creamy peanut butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • ½ cup rolled oats
  • 1 teaspoon baking soda
  • 2 teaspoons hot water
  • ½ teaspoon salt
  • 2 cups semisweet chocolate chips
  • ½ cup crushed pretzels
  • ½ cup toffee bits (I like to crush up a health bar or three)
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together the butter,sugar, molasses, and peanut butter until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, oatmeal, chocolate chips, pretzels and toffee bits. Drop by large spoonfuls onto ungreased pans.
  3. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.
