Ingredients
- 2 cups organic spinach
- ⅔ cup frozen mixed vegetable cooked to package directions
- ½ cup cooked brown rice
- ¼ of an avocado
- ¼ cup of your favorite salsa
Instructions
- In the bottom of a bowl place spinach
- Top with cooked vegetables, rice, avocado, and salsa
- NOTE: This is also great with a little shredded Mexican blend cheese or a dollop of sour cream!
