Let’s be real, Monday is not exactly the most popular day of the week, but it is probably biggest reset day of the week. Why not do a reset that will have you looking forward to the first workday of the week? This bright and sassy jicama salad is just the thing to light up your day!

Ingredients
  • 1 medium jicama peeled
  • ½ jalapeno thinly sliced (remove seed for less heat)
  • 2 oranges cut into segments (reserve half of one orange for juice)
  • ½ mango cut into cubes
  • 2 TBS cilantro chopped
  • 1 TBS fresh mint chopped
  • 1 TBS olive oil
  • Salt & pepper to taste
Instructions
  1. Either cut jicama into thin matchsticks or run through food processor (I tried both ways and preferred the food processor)
  2. Put jicama, orange segments, mango, cilantro, and mint in a large bowl
  3. Drizzle with orange juice and olive oil
  4. Add salt and pepper
  5. Mix well
