Ingredients
- 1 medium jicama peeled
- ½ jalapeno thinly sliced (remove seed for less heat)
- 2 oranges cut into segments (reserve half of one orange for juice)
- ½ mango cut into cubes
- 2 TBS cilantro chopped
- 1 TBS fresh mint chopped
- 1 TBS olive oil
- Salt & pepper to taste
Instructions
- Either cut jicama into thin matchsticks or run through food processor (I tried both ways and preferred the food processor)
- Put jicama, orange segments, mango, cilantro, and mint in a large bowl
- Drizzle with orange juice and olive oil
- Add salt and pepper
- Mix well
