It's high noon and blazing outside. The thought of making anything for lunch seems like a lot of effort, but you're hungry...so what to do? Watermelon salad! It's light, refreshing, and a cinch to throw together!

Ingredients
- 2 Cups Watermelon Cubed
- ¼ Red onion diced (how much onion you use will depend on your taste preference)
- 1oz Goat Cheese - I like to use the herbed variety
- Optional - Sprinkle of salt or a drizzle of balsamic vinegar
Instructions
- Toss the watermelon and onion together and top with goat cheese. It's that easy!
