Easy egg white scramble, that whips up a healthy breakfast for your busy morning!

Ingredients
- 3 Egg whites
- 3 Tablespoons water
- Salt & Pepper
- 2 Cups fresh spinach
- 1 Tomato diced
- Slice of whole wheat bread toasted
- 1 Tablespoon cream cheese
Instructions
- Combine the egg whites, water, salt and pepper in a small bowl and beat with a fork.
- Spray a pan with no cook spray and but over medium low heat. Note: If you heat your pan to the high heavens your eggs will stick!
- Add the egg whites.
- Run a spatula through your eggs a few times. Once they are starting to cook add the spinach. It will seem to overwhelm the pan. Don't panic! It will cook down. Promise.
- Once the spinach has wilted and the eggs are cooked through, add the diced tomatoes. They only need a minute in the pan.
- In the meantime, spread the toast with cream cheese.
- Top your toast with the egg mixture and enjoy!
- If you want to take it up a notch, throw on a few dashes of hot sauce. Yum!
