Light Lentil Lunch
- 1 cup green lentils
- 1 cup yellow lentils
- ¾ cup green or red seedless grapes halved
- ½ cup almonds chopped
- ½ medium red onion diced
- ½ medium red pepper diced
- Juice of ½ a lemon
- 4 Tbs olive oil
- salt and pepper to taste
- In a medium sauce pan boil water
- Add a few tablespoons of salt after water starts boiling
- Add both cups of lentils
- Cook for about 35 minutes or until tender
- Drain
- In a large bowl combine lentils, grapes, almonds, onion, and red pepper
- In a small jar add lemon juice, olive oil, salt, and pepper. Shake to combine. Add to lentil mixture and stir to combine.
