Light Lentil Lunch

This is a lovely light lunch that is perfect for helping you power through your afternoon.
Serves: 5
Ingredients
  • 1 cup green lentils
  • 1 cup yellow lentils
  • ¾ cup green or red seedless grapes halved
  • ½ cup almonds chopped
  • ½ medium red onion diced
  • ½ medium red pepper diced
  • Juice of ½ a lemon
  • 4 Tbs olive oil
  • salt and pepper to taste
Instructions
  1. In a medium sauce pan boil water
  2. Add a few tablespoons of salt after water starts boiling
  3. Add both cups of lentils
  4. Cook for about 35 minutes or until tender
  5. Drain
  6. In a large bowl combine lentils, grapes, almonds, onion, and red pepper
  7. In a small jar add lemon juice, olive oil, salt, and pepper. Shake to combine. Add to lentil mixture and stir to combine.
  8. Enjoy!
