Meatless Monday Made Mmm-mmm Yum!

- 1 eggplant
- 2 zucchini
- bunch of asparagus
- 4 cups spinach
- 1 tsp minced garlic
- 2 eggs
- 1 cup flour
- 2 cups Panko bread crumbs
- ⅓ cup Parmesan cheese
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- 1 cup marinara sauce
- Preheat oven to 375degrees and line a baking sheet with foil. Spray with cooking spray.
- Peel eggplant and cut into slices lengthwise
- Trim and wash asparagus
- Put four in a shallow bowl
- Put eggs in another shallow bowl and beat together.
- Put bread crumbs, cheese, garlic powder, salt, and pepper in a third shallow bowl and mix.
- Bread the eggplant, zucchini, and asparagus by dipping in flour, then eggs, then bread crumb mixture.
- Lay them on baking sheet and place in oven.
- Cook for 20min.
- In the meantime spray a saute pan with cooking spray and heat over medium heat.
- Add spinach, stir periodically.
- When spinach has wilted, add minced garlic and cook until combined and heated through.
- Plate with spinach on bottom and breaded veggies on top.
- Top with marinara sauce.
