Dude, your pasta is red!

- store bough rotisserie chicken (or last night's leftovers work too!)
- ½ lb of red lentil pasta (I like Trader Joe's version)
- 2 cups fresh spinach
- ½lb brussel sprouts
- 3 TBS Olive Oil - divided use
- salt and pepper
- avocado (optional)
- Parmesan Cheese (optional)
- Preheat oven to 400 degrees
- Line a baking sheet with foil
- Clean and halve brussel sprouts
- Put brussel sprouts on baking sheet and toss with 1.5TBS of olive oil, sprinkle with salt & pepper
- Put brussel sprouts in oven and cook for 20min
- In the meantime shred the chicken and boil water for pasta
- Cook pasta according to package directions
- In the last minute of cooking pasta, add spinach
- Drain
- In a large bowl mix together chicken, brussel sprouts, pasta, olive oil, and Parmesan cheese if using
- Season with salt and pepper
- Top with avocado if using
