Easy egg white scramble, that whips up a healthy breakfast for your busy morning!

Ingredients
  • 3 Egg whites
  • 3 Tablespoons water
  • Salt & Pepper
  • 2 Cups fresh spinach
  • 1 Tomato diced
  • Slice of whole wheat bread toasted
  • 1 Tablespoon cream cheese
Instructions
  1. Combine the egg whites, water, salt and pepper in a small bowl and beat with a fork.
  2. Spray a pan with no cook spray and but over medium low heat. Note: If you heat your pan to the high heavens your eggs will stick!
  3. Add the egg whites.
  4. Run a spatula through your eggs a few times. Once they are starting to cook add the spinach. It will seem to overwhelm the pan. Don't panic! It will cook down. Promise.
  5. Once the spinach has wilted and the eggs are cooked through, add the diced tomatoes. They only need a minute in the pan.
  6. In the meantime, spread the toast with cream cheese.
  7. Top your toast with the egg mixture and enjoy!
  8. If you want to take it up a notch, throw on a few dashes of hot sauce. Yum!
