Strawberry Salad Dressing brightens up greens any day of the week…and the best part? This dressing has only three ingredients!

I’m not gonna lie, when the thought of, “what’s for dinner tonight?” popped into my head, I did an inward groan. Mostly because I am just feeling plain lazy and don’t want to deal with it, I decided that tonight’s dinner was going to be no-cook, no-hassle. I literally used what I had on hand and called it a meal! So if tonight’s your “lazy night”, below is a recipe for you!

Recipe type: Dinner
Ingredients
  • 2 cups of any greens you like. I used spinach
  • ½ cup of fresh fruit. I had mangoes on hand, but strawberries, apples, pears, berries of any kind work well here!
  • ¼ of walnuts or almonds or cashews - go nuts and use what you like - coarsely chopped.
  • ⅛ cup Gorgonzola cheese (optional)
  • Grilled veggies (I used asparagus) optional
  • Avocado (optional)
  • Dressing:
  • ¼ cup strawberry preserves
  • 1 TBS grainy mustard
  • 2 TBS Balsamic or Red Wine Vinegar (you may need a little more if your dressing is thick)
Instructions
  1. Plate your salad.
  2. In a glass jar put jam, mustard, and vinegar. Put lid on jar and secure. Shake well!
  3. Pour dressing over salad and enjoy!
  4. Told you this was easy. 😉
