Oats? Totes!

Need something that’s grab and go? This granola is chock full of healthy ingredients that are sure to keep you going throughout your busy day!

My afternoons can be crazy and sometimes stopping for lunch just doesn’t happen. I needed something that was grab and go with ability to keep me full without making me feel guilty that I ate it. This granola was just the thing to keep my afternoon running on all cylinders, and the best part? It couldn’t be more simple to make. Just dump, mix, and bake!

Start by adding oats, nuts, almond flour,nut butter, honey, almond milk, yogurt, flax and chia seeds, and cinnamon to a bowl or stand mixer.

Mix until just blended.

 

Add egg and dried cranberries and give it a few more rotations on the mixer. Transfer to a foil lined pan that has been lightly sprayed and spread mixture out.

 

Top with cinnamon and a sprinkling of raw sugar.

  • 1 cup rolled oats
  • 1 cup steel cut oats
  • ½ cup almond flour
  • ½ cup mixed nuts (or any of your choice - go nuts!)
  • ½ cup nut butter (I like to use all-natural peanut butter)
  • 2 TBS Honey
  • 2 TBS cinnamon (divided use)
  • 1 TBS flax seeds
  • 1 TBS chia seeds
  • ½ cup almond milk
  • ½ cup non-fat Greek yogurt
  • ½ cup dried cranberries (you can use dried cherries, raisins, or any other dried fruit you like!)
  • 1 TBS raw sugar
Instructions
  1. Preheat oven to 350 degrees. Line a baking sheet with foil and spray with non-stick spray.
  2. Mix oats, flour, nuts, nut butter, honey, 1 TBS cinnamon, flax seeds, chia seeds, almond milk, and yogurt until just combined.
  3. Add egg and cranberries. Mix until combined.
  4. Turn mixture out onto prepared pan. Spread it out evenly. Sprinkle with raw sugar and remaining TBS of cinnamon.
  5. Bake for 25-30min. Rotate partway through.
  6. NOTE:This recipe is really versatile. You can add shredded coconuts, omit the nuts if there are allergies, trade out the flour for one of your choice. It's really easy to make this one your own!
