Orange You Glad for Cake?

The scent of oranges has been scientifically proven to make you happy. Eating cake has been proven by me to make me happy. So I decided to blend the two for a double dose of happy! This basic white cake is infused with fresh orange juice and orange zest and boasts a layer of zesty orange frosting laden with chocolate chips. Let’s get happy!

The cake batter is a simple white cake recipe that gets a blast of orange from fresh orange juice and fragrant orange zest.

Once baked the cake is topped with a frosting that is bursting with orange flavor.

 

And since orange and chocolate pair so well, I decided to add a few chocolate chunks to the mix!

Orange You Glad for Cake?

Ingredients
  • 1 cup white sugar
  • ½ cup butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ¾ teaspoons baking powder
  • ¼ cup milk
  • ¼ cup orange juice
  • 2 TBS orange zest
  • Filling
  • ¼ cup butter softened
  • 2 cups powdered sugar
  • ¼ cup fresh orange juice
  • 2tps orange zest
  • ¼ cup chocolate chunks (optional)
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x9 inch pans.
  2. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk , orange juice and orange zest until batter is smooth. Pour or spoon batter into the prepared pan.
  3. Bake for 20 to 25 minutes in the preheated oven. Cake is done when it springs back to the touch.

  5. Beat butter until fluffy. Add powdered sugar and orange zest. Slowly pour in orange juice while continuing to beat in. Add more powdered sugar or orange juice to get to desired consistency. Frost one layer of cake and add chocolate chunks if desired. Top with second layer.
