Meatless Monday Made Mmm-mmm Yum!

It’s Monday night and you need something to start the week off right. This meatless Monday meal, is just the thing to make sure your week is off to a healthy start!

Let’s be honest sometimes the weekend becomes one big cheat day, and Monday gets designated as the reset day…which kinda adds to the eye roll that Monday usually evokes. So to give Monday a break from it’s eye roll worthy status, this recipe is one that will have you looking forward to Monday night!

Ingredients
  • 1 eggplant
  • 2 zucchini
  • bunch of asparagus
  • 4 cups spinach
  • 1 tsp minced garlic
  • 2 eggs
  • 1 cup flour
  • 2 cups Panko bread crumbs
  • ⅓ cup Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup marinara sauce
Instructions
  1. Preheat oven to 375degrees and line a baking sheet with foil. Spray with cooking spray.
  2. Peel eggplant and cut into slices lengthwise
  3. Trim and wash asparagus
  4. Put four in a shallow bowl
  5. Put eggs in another shallow bowl and beat together.
  6. Put bread crumbs, cheese, garlic powder, salt, and pepper in a third shallow bowl and mix.
  7. Bread the eggplant, zucchini, and asparagus by dipping in flour, then eggs, then bread crumb mixture.
  8. Lay them on baking sheet and place in oven.
  9. Cook for 20min.
  10. In the meantime spray a saute pan with cooking spray and heat over medium heat.
  11. Add spinach, stir periodically.
  12. When spinach has wilted, add minced garlic and cook until combined and heated through.
  13. Plate with spinach on bottom and breaded veggies on top.
  14. Top with marinara sauce.
