This quick dish is healthy and bright and it’s just right for a light lunch or a unique side!

Scrub beets and trim ends.

Ingredients
  • 4 beets of similar size (I used a mix of organic gold and red beets)
  • 1 oz goat cheese
  • several sprigs of fresh thyme
  • olive oil
  • salt and pepper
Instructions
  1. Scrub beets and trim ends
  2. Place in a pot of water (water should cover beets)
  3. Bring to a boil for about 20-30min or until tender
  4. Drain beets and let cool
  5. Slice beets and arrange on a plate
  6. Put goat cheese in the center
  7. Drizzle beets with olive oil
  8. Sprinkle with salt and pepper
  9. Lace with thyme
