Ingredients
- 4 beets of similar size (I used a mix of organic gold and red beets)
- 1 oz goat cheese
- several sprigs of fresh thyme
- olive oil
- salt and pepper
Instructions
- Scrub beets and trim ends
- Place in a pot of water (water should cover beets)
- Bring to a boil for about 20-30min or until tender
- Drain beets and let cool
- Slice beets and arrange on a plate
- Put goat cheese in the center
- Drizzle beets with olive oil
- Sprinkle with salt and pepper
- Lace with thyme
