Dude, your pasta is red!

 

The base of this sassy meal is red lentil pasta, and it comes together in no time at all!

The meal prep on this one begins with cleaning and halving Brussel sprouts and coating them in olive oil and some salt and pepper.

Roast them up for about 20 min in a 400 degree oven while you put a pot of water on to boil.

When your pasta is a minute from being done, throw in some spinach, and you’re just about done!

Ingredients
  • store bough rotisserie chicken (or last night's leftovers work too!)
  • ½ lb of red lentil pasta (I like Trader Joe's version)
  • 2 cups fresh spinach
  • ½lb brussel sprouts
  • 3 TBS Olive Oil - divided use
  • salt and pepper
  • avocado (optional)
  • Parmesan Cheese (optional)
Instructions
  1. Preheat oven to 400 degrees
  2. Line a baking sheet with foil
  3. Clean and halve brussel sprouts
  4. Put brussel sprouts on baking sheet and toss with 1.5TBS of olive oil, sprinkle with salt & pepper
  5. Put brussel sprouts in oven and cook for 20min
  6. In the meantime shred the chicken and boil water for pasta
  7. Cook pasta according to package directions
  8. In the last minute of cooking pasta, add spinach
  9. Drain
  10. In a large bowl mix together chicken, brussel sprouts, pasta, olive oil, and Parmesan cheese if using
  11. Season with salt and pepper
  12. Top with avocado if using
